Ingredients
1 pound turkey burger
1 onion (vadalia, red, or yellow)
3 cloves garlic
1/2 cup carrots
1 red pepper
1 can white corn, drained
1 can black beans, drained
1 can light red kidney beans, drained
1 can dark red kidney beans, drained
1 can rotel
1 cup of chicken broth
1 Taco Seasoning packet
Ranch Mix
2 Tbsp Parsly
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 1/2 tsp Dill Weed
1/2 tsp salt
1/2 tsp black pepper
2 tsp chives
Directions
Brown the turkey burger. Cook the onions, red pepper, garlic, and carrots till the onions are translucent.
Put the broth, corn, black beans, red kidney beans (light and dark), rotel, cooked vegetables, and turkey burger in the slow cooker. Add as much water as you want to the slow cooker. I like to add enough to cover the vegetables and meat.
Add the taco seasoning packet and the ranch mixture.
I set the slow cooker for 6 hours.
Notes
You can serve with cheese, avocado, or sour cream.
