Peanut Butter Oatmeal Cookie Bars

Ingredients

1/2 cup butter

1/2 cup peanut butter

1/2 cup brown sugar

1/2 cup sugar

1 tsp vanilla

1 egg

1 cup gluten-free flour

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp xanthan gum

1 cup oatmeal

1 cup white chocolate chips

Directions

Set the butter out to soften, and the egg to reach room temperature.

Grease a 9″ x 13″ pan. Preheat oven to 350 degrees Fahrenheit.

Cream butter, peanut butter, brown sugar, sugar, vanilla, and egg together.

Mix flour, oatmeal, salt, baking powder, and xanthan gum together.

Mix the flour with the creamed butter mixture.

Add in the white chocolate chips.

Bake for 20 minutes or until a toothpick comes out clean.

Notes

You can also add cranberries.

If you can substitute other varieties of chocolate chips.

If you can use self-rising flour, omit the baking powder, salt, and xanthan gum.
