Ingredients
Bag of Brussel Sprouts – halved
3 or 4 Sweet Potatoes – cubed
1 onion – sliced
2 tbsp olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin ( I like cumin… you can half this is you prefer less cumin)
1/4 tsp cayenne pepper (I do 1/2 cause I like it spicy)
1 tsp Kinder Honey Chipotle seasoning
1/4 tsp pepper
1/2 tsp of salt or less
Directions
Preheat your oven to 450.
Line a sheet pan with aluminum foil and grease it.
Cut the Brussels sprouts, sweet potatoes, and onions into small pieces.
Put Brussels sprouts and sweet potatoes in the boil with olive oil and coat.
Mix the spices (onion, garlic, cumin, Kinder, pepper, cayenne, and salt) in a little bowl. Add 2/3rds of the mix to your Brussels sprouts and sweet potatoes. Mix.
Put the spiced Brussels sprouts and sweet potatoes on the sheet pan. Put in the oven for 10 minutes.
Put the onion slices in the empty bowl. Mix with olive oil and the remainder or less of the spice mix.
At the 10-minute mark, test your Brussels sprouts and sweet potatoes with a fork. If tender, add the onions to the pan and return to the oven for 5 minutes. If not tender, return the Brussels sprouts and sweet potatoes to the oven for another 5 minutes without the onions. After 5 minutes, retest the tenderness. If not tender enough, add another 3 minutes and recheck.
When you add the onions, they will be done when they have slightly burnt tips. Or that is how we like them 🙂
Notes
For Whole30, do not use the Kinder seasoning due to its sugar content.
We like our onions with char, so we might cook ours longer to get that char 🙂
Try out different spice mixtures to see what you like with the veggies 🙂 Food is subjective!
If you are concerned that the vegetables will burn before they become soft, you can cover the sheet pan and vegetables with aluminum foil. I would cook for 15 minutes, check the tenderness, and then remove the foil to achieve a little char once your vegetables reach the desired tenderness.
We add the onions later in the cooking process because they cook faster.
If 450 makes you nervous, we have also cooked this at 425. We had to add an extra 5 minutes of cooking time for the first timed cook.
