What you’ll need
- 2 cup black beans
- 2 cups sharp cheddar cheese
- 1/2 of a red onion
- 1/2 each of yellow & orange peppers
- 4 gluten free wraps
- 2Tbsp taco seasoning ( or to taste)
- Olive oil spray
What you’ll do
- In a pan, warm black beans with taco seasoning. If using canned beans, make sure to strain them first.
- If beans look dry add about 1/2 cup water to help the taco seasoning cook into the beans. Simmer for about 10 to 15 minutes to allow seasoning to cook in. If you are using canned beans, you may need less water.
- Julienne the onions and peppers. (Julienne is a long cut)
- Spray a separate pan with olive oil spray
- Saute the onions and peppers for about 5 minutes or until desired texture is reached.
- On a hot griddle, flat top, or large frying pan, spray the olive oil spray.
- Place the gluten free wrap on the griddle or flat top for about 1 minute.
- After the minute add a 1/4 cup of cheese to half of the quesadilla, and let cook 1 minute more.
- Add a layer of the onions, peppers, and beans on top of the cheese. ( don’t over do or you won’t be able to bring the wrap over.
- Add another 1/4 cup of cheese.
- Fold the naked side of the wrap over the cheese.
- Let cook on this side for 30 seconds. Then flip and let cook for 30 seconds more.
- Remove from heat and cut into 4 pieces.
Yield: 4 quesadillas
