What You’ll Need
- 2 ripe bananas
- 3 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/8 tsp cinnamon
- pinch of nutmeg
- cooking spray
What You’ll Do
- Mash the bananas
- Mix in the eggs
- Add the vanilla, baking powder, cinnamon, nutmeg (Mike is not a huge fan of cinnamon so I don’t go overboard because of that)
- Heat a skillet on medium heat.
- We use cooking spray because of Weight Watchers. But use what you are comfortable with not having it stick.
- Scoop about 1/4 cup of batter onto skillet
- Wait for bubbles to appear in the middle and the edges to look a little dry
- Flip and cook another 2 to 3 minutes or until desired brownness is on the bottom
- Remove and serve with syrup or jelly of choice 🙂
Note: This recipe was first noticed in Weight Watchers. However they used powdered sugar and less baking powder and vanilla than we have opted to. It is 0 points this way on the blue level.
