Banana Pancakes

What You’ll Need

  • 2 ripe bananas
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp cinnamon
  • pinch of nutmeg
  • cooking spray

What You’ll Do

  1. Mash the bananas
  2. Mix in the eggs
  3. Add the vanilla, baking powder, cinnamon, nutmeg (Mike is not a huge fan of cinnamon so I don’t go overboard because of that)
  4. Heat a skillet on medium heat.
  5. We use cooking spray because of Weight Watchers. But use what you are comfortable with not having it stick.
  6. Scoop about 1/4 cup of batter onto skillet
  7. Wait for bubbles to appear in the middle and the edges to look a little dry
  8. Flip and cook another 2 to 3 minutes or until desired brownness is on the bottom
  9. Remove and serve with syrup or jelly of choice 🙂

Note: This recipe was first noticed in Weight Watchers. However they used powdered sugar and less baking powder and vanilla than we have opted to. It is 0 points this way on the blue level.
