This site is to share recipes that we’ve been making over the years. I have a habit of finding recipes, trying them, liking some, then forgetting all about them… this way I’ll have a repository of recipes we like to use for meal prepping.

Warning – these recipes are gluten free. I have a sensitivity to gluten that makes me someone I don’t like when I eat gluten. My symptoms started before 2013, but it wasn’t until I ended up returning from a camping trip with red lines climbing my legs that I knew something had to give.

My body reacts to gluten as a foreign agent that it can’t find… and when it sends the immune system into battle the “intruder”… the immune fighters can’t find anyone to attack so it manifests as very itchy bumps between my toes and in the palm of my hands. On that trip the blisters all grouped together to form a large blister that I popped and then didn’t clean as I should have.

Since going gluten free I have noticed an improvement in my skin, gut, and attitude. I am no longer having to lay down in the floor and falling asleep for hours because I was so exhausted.

In 2017, Mike weighed himself one day and saw 299lbs on the scale. He decided that something had to change. Through Weight Watchers, he has lost 80lbs. And he has been able to stay under 220 since joining Weight Watchers. As with anything talk to your medical professional before trying anything. And your results may verify.

Have we been perfect on Weight Watchers… no… we like food. But it has helped us to find alternatives that we are happy with. And we do have cheat days… and we’ll more than likely include those recipes 😉

We do try to meal prep each week to cut down on having to think about dinner… there are some weeks where things get away from us… but we have found it easier to eat better when we plan ahead.

We also love to camp. And we love to experiment with new recipes while we are camping.
